There are a few producers that really push the boundaries of winemaking. Jose Miguel Marquez is one of them and this un-fortified sherry is a great example. Named Bajo Velo meaning 'under veil' which refers to the method by which this natural wine is made. A film of yeast called 'flor' is allowed to develop on the surface of the wine and protects it as it ferments, which goes to create the distinctive oxidative profile of sherry (Which is made in the nearby Jerez). As this natural white wine is not fortified, as is the normal practice with sherry, this wine expresses itself on a much lighter plane - sweet ripe apricots and honey please the palate supported by enticing oxidative notes.
