The cuvée was made with a "mestizo" white blend (mixture of territories) with grapes from the historic vineyards of Sierra de Gata and the old territories of Guzquía in Toledo, as follows: - Ojo de Llibre (near extinct grape in extramadura, ner the portuguese boarder) - Typical Guzquía varieties (verdoncho, pardillo, malvar or airén) - Airén del pais early harvest reserve (the latter harvested green in August 2018, with the idea of preserving acidity and freshness). Gentle aromas of fresh and bruised green apple and a touch of spice. Bone dry with lovely flavour nuance of fresh white fruit such as white pear. Soft, crisp bubbles, balanced acidity and refreshing minerality that runs across the palate. to be served chilled, very stable and can be confidently served the next 2 days (at least) after opening.
