Mind Over Matter 2019

"A textural, aromatic Pet Nat made from a field blend of Siegerrebe (36%) and Solaris (64%). A portion of the Siegerrebe (10% of the total) was hand destemmed and then foot trod in an amphora. The remaining fruit was whole bunch pressed and naturally settled before being racked to the same amphora. Spontaneous fermentation began quickly, and the wine was bottled via gravity 15 days later to complete fermentation and produce a light fizz. Naturally cold stabilised over the winter months and lightly disgorged to remove the heaviest lees. The fruit used for this natural wine was grown by Kathy Archer at her vineyard just outside of Ottery Saint Mary in Devon. Kathy is an Organic grower (uncertified) and eschews the use of pesticides and herbicides entirely, relying on hard work and spending time amongst the vines to produce grapes of extraordinary quality. No added sulphites and no fining or filtration. 10.5% abv. 501 bottles made."
