The vineyards are cultivated in the traditional way, fully respecting their potential by letting nature take its course without artificial or invasive interventions. The yields are low due to the age of the vines, the short pruning, the absence of fertilization, the spontaneous grassing and the respect for the harvesting and processing times. Only the best vintages are vinified. Of course, with the exclusion of any oenological additives, which results in high-quality wines that truly express their potential and quality of work done to achieve them.
