A wink to the better days that come after winter, Revoir un printemps is a dry rose made from 50% Tsitska from Terjola, 20 % Chkhaveri from Guria, 30% Aladasturi from Vartsikhe. Tsitska was harvest the 1st of October and was direct pressed, fermentation took place in Qvevri and old French oak. Aladasturi was picked on the 14th of October and was direct pressed, fermentation took place in barrels. Chkhaveri was harvested the 22th of November and fermented on skins for 12 days in Qvevri then was racked to an old barrel. The final blend was aged both in Qvevri and old oak barrel. The wine was bottled unfined with a minimal amount of So2. Qvevri went through a coarse filtration. Production : 900 bottles In the glass, a vivid pink colour. Nose is exotic with hints of melon and passion fruit with nuances of spices and flint. The mouth is rich, fresh and complex.
