Franck Pascal, the owner and winemaker, decided to leave his appellation in 2012 because he felt that his wines are different from most wines produced in Bergerac. He describes his winemaking methods in this short text: "First of all do not harm, then produce differently. produce otherwise. The search for a living natural balance, therefore dynamic, is our main objective here. The use of chemicals, fertilizers and synthetic pesticides are therefore prohibited. We favour "natural" practices such as intercrops of cereals, green manures and flowerbeds that attract and feed "auxiliary" insects that regulate "pests" and thus avoid treatments. Moreover, the use of biodynamic preparations as taught by Steiner in 1924, gives our vines the indispensable link with the "etheric and astral" forces that surround us. In line with these natural practices, in the cellar, we favour non-intervention and the absence of "technology" and oenological inputs. Native yeasts, little sulfur, no inputs and the minimum of interventions: this is our credo"
