Michael Gahier makes his beautiful white wines using the commonly known method of 'ouille', meaning that the barrel is regularly topped up with wine in order to prevent oxidation. With this cuvee, Michael performed the topping up at ever so slightly longer intervals which allowed a discerningly faint note of oxidation to be expressed in the wine, and its absolutely charming. A zesty, lively Chardonnay with notes of preserved lemons and orchard fruit and a slight nutty touch on the finish. We recommend serving chilled and pairing with your favourite Comté or Gruyere.
